Happy Hour

Mojitos used to be my go-to happy hour drink until I discovered Strawberry Mojitos! What could be more perfect on a Spring day than fresh strawberries, mint and lime? Just add rum and you are set! For my strawberry mojito, I used Bacardi Dragonberry Rum instead of a traditional white rum. It gives the drink the strawberry flavor and for added sweetness, I threw in some fresh, muddled strawberries. This drink can be made with any type of berry. Just use your favorite berry and switch out the flavored rum. So, if you are looking to change up your happy routine or simply wanting to take advantage of Spring’s fresh produce, I highly suggest you try a strawberry mojito.

Directions:

1. In a chilled glass (about 10-12 ounces), muddle the simple syrup, strawberries and mint leaves together with the back of a spoon or muddler. Crush the strawberries and mint leaves well.

2. Squeeze the juice from the lime into the glass, add the rum and stir well. Fill glass with ice and top off with soda water.

3. Garnish with mint sprigs or strawberry slices.
